Honey Biscuits.


Ingredients

  • 175g butter, cut into small chunks
  • 100g caster sugar
  • 85g honey
  • 1/4 teaspoon ground cinnamon
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 280g self raising flour, sieved

Makes about 25 biscuits.



Method

  1. Gently melt the butter, sugar, honey  and cinnamon in a medium saucepan until the mixture is smooth.  Then allow to cool for 10 minutes.
  2. Put the oven on at 180°C. Prepare 2 shallow oven trays with baking paper.
  3. When the butter mix is cool, stir in the egg, vanilla and flour. Then roll into teaspoon size balls. Flatten them onto the baking tray. Allow a little room for the circles to spread during cooking. 
  4. Place in the hot oven for 12 minutes, or until golden brown.
  5. Place on cooling racks to enjoy later.
